Intensive class for food lovers!!

I have listed some examples of the schedule for the guests to intensive cooking classes. It usually takes more than 2 days to learn as many dishes and deeply as possible. It it very flexible that we sometimes go to market together and buy ingredients to send to your country. We learn many kinds of Japanese dishes, sweets and cooking skills what you want to learn.

Example course of intensive Japanese Cooking Class in Tokyo

Example 1: Japanese dishes intensive class offered to the guests of Spanish chef for 7 days. In addition to the cooking, we enjoyed shopping in the Kappabashi Japanese kitchen tool market and local supermarket.

Intensive class Day1

(Dinner)
main: Sake no Chanchan-yaki (baked salmon with Miso) ....local speciality of Hokkaido region
Takikomi Gohan( Rice seasoned with soy sauce and meat)
side: potato salad with mayo and Wasabi,
Dengaku (vegetable with sweet Miso sauce)


Intensive class Day2

(Lunch)
main: Duke-don ( Tuna bowl), Maki-zushi (Sushi roll) ,
side: Japanese salad with seaweed, fried Rotus root

(Dinner) Bento dishes
main: Karaage, Japanese omlette, Nanban-duke ( Deep-fried fish marinated in a vinegar sauce)
side: Gomaae (vegetable with sesami),Onigiri (rice ball),

Intensive class Day3

(Dinner)
main: Teriyaki chicken, Gyoza (Japanese dumplings)
side: Sunomono (Japanese pickles), Miso-soup

Intensive class Day4

(Lunch)
main: Chicken Nanban
side: Ramen egg, Shiraae(vegetable dressed with Tofu)

(Dinner)
main: Agedashi-dofu (deep‐fried bean curd in a light savory sauce), Tempura (seafood,vegetable and mushroom),
side: Imo-mochi (potato cake) , Osuimono

Intensive class Day5
(Lunch)
main: Nimono (stewed vegetable with chicken),
Sakamushi (boiled crum with Sake)
side: pickled Daikon, Iri-dofu (scrambled Tofu)


(Dinner)
go to Sushi restaurant to learn Nigiri sushi

Intensive class Day6

(Lunch)
main: Ebi-mayo (mayo shrimp), Tsukune (chicken vegetable meat ball )
side: Goma-tofu (sesame tofu), Tororo


(Dinner)
main: Sukiyaki, Sashimi
side: carrot salad with sesame dressing,

Intensive class Day7

(Lunch)
main: Simmered fish (with soy), Katsu-don,
side: soy milk soup, boiled eggplant


(Dinner)
main: Yakiniku, grilled fish (or Sakana no Nanban),grilled meat with SHIO-KOJI
side: Tsukemono (Daikon pickles), Kanitama (club and egg)

Example 2: Japanese dishes and sweets intensive class offered to the guests from France for 4 days. We enjoyed the exchange of the cooking class between Japanese sweets and French sweets at last on the final day.

side: potato salad with mayo and Wasabi, Dengaku (vegetable with sweet Miso sauce)

main: Sukiyaki, Nanban-duke ( Deep-fried fish marinated in a vinegar sauce)
side: pickled Daikon, Iri-dofu (scrambled Tofu)


Intensive class Day3

(Lunch)
main: Karaage, Agedashi-dofu (deep‐fried bean curd in a light savory sauce)
side: Onigiri ( rice ball), Nimono (stewed vegetable),

(Dinner)
main: Duke-don ( Tuna bowl), Gyoza
side: Goma-tofu (sesami tofu), Imo-mochi (potato cake)

Intensive class Day4

(Lunch)
main: Simmered fish with vegetable, Chicken Nanban( Or do you want Katsudon rather than ir?)
side: Ramen egg, Shiraae(vegetable dressed with Tofu),

(Afternoon)
Japanese sweets such as daifuku, dango or maccha roll (green tea roll).

Example 3: Japanese dishes and sweets intensive class offered to the guests from South America for 2 days

Intensive class Day1

(Lunch)
-Some kinds of Onigiri (Japanese rice balls)
-Tempura
-Tempura sauce
-spinach with sesami sauce
- Please choose one of them
Karaage(Japanese chicken fries) or Agedashi Dofu (Fried Tofu with sauce)
-Miso soup

(Sweets)
-Anko(sweet red bean paste)
-Please choose one of them,
Mochi or Zenzai

(Dinner)
-Gyoza
-Japanese pickles
-Boiled Chicken and roots vegetables
-Japanese omlette
-Osuimono (Japanese clear soup)

Intensive class Day2

(Lunch)
-Teriyaki chicken pizza
-Please choose one of them,
Melon bread or Anko bread or noodle sandwich
-Japanese tofu salad with soy dressing

(Sweets)
-Green tea roll cake (use Green tea cream and Anko)

(Dinner)
-Please choose one of them,
Sushi roll or Chirashi-zushi
-Sukiyaki
-eggplant and Green peppers sauteed with Miso
-Miso soup

Example 4: Japanese dishes class offered to the guests from India for 10 days. All of the menus are avoided beef and pork because of the request by guest.

- Main dishes
Chicken Karaage, White siteu, Oyako-don, Nimono, Japanese croquetto, Teriyaki chicken, Agedashi-tofu, Tsukune, Vegetable Sushi roll, Soboro-gohan, Nanban-duke, Okonomiyaki, Tofu-gratin, Mabo-Tofu, Japanese hamburg, Gyoza, Omurice, Tempura, Tofu Kabayaki, Chahan, Tofu hamburg, Shumai, Udon, Spicy chicken Karaage, Koya-dofu, Chinjao ro-su, Japanese curry, Chicken shio-Koji,

These menus are all based on chicken or Tofu because of the request by guest. Some menus like Gyoza or Japanese hamburg, we usually use pork but I use chicken ground meat instead of them.

- Side dishes
We make simmered vegetable, Japanese pickles, Japanese egg roll, vegetable with sesame dressing etc.
